Orange, Almond & Coconut Bites

These little bites have become a real family favourite in our house. They’re naturally sweet, really easy to make, and perfect for those evenings when you’re craving something sugary but still want something made from simple, wholesome ingredients.

The dates give them a lovely caramel-like sweetness, while the orange zest keeps them fresh and light. I also love that they take just a few minutes to throw together and that they're gluten free!

Simply put the following ingredients into your blender, and blend until the mixture becomes smooth:

  • 1 cup soft pitted dates

  • 1 cup almonds

  • 1 cup of raw coconut pieces

  • Grated zest of 2 oranges

  • 4 tbsp fresh orange juice

Next:

Roll the mixture into small balls, the size of ping pong balls or smaller.

They will look like this:

Then:

Put ½ cup of dessicated coconut on a plate and roll each ball on top until it's coated.

Finally:

Store in an airtight container in the fridge and chill for around 30 minutes before serving.

Enjoy!
