Easy Chocolate Spread

This chocolate spread is so quick and easy to make, I keep a constant supply of it in the fridge. Although I love my Vegan Nutella (recipe here), hazelnuts are quite expensive, and cooking them beforehand adds extra time to the process. This spread is far more straightforward and is one of my essential breakfast food items. I'll usually just spread a thick later on top of a brown rice cracker, with a few slices of banana or strawberry. If I'm feeling especially decadent I might top it off with a lovely dollop of coconut cream! Using just four ingredients, it's bursting with all the goodness of nuts and dates and is a great way to fuel your body at the start of the day.

Simply place the following ingredients in your vitamix/food processor and blend until smooth:

1 cup cashew nuts

1 cup dates

½ cup coconut milk

1 tbsp cocoa powder

And that's it! Keep in an airtight jar in the fridge and try to resist the temptation of eating it by the spoonful!
