Homemade Vegan Mayonnaise

I love mayonnaise! Potato wedges, vegan sausages, veggie sticks (I could go on and on!) all taste so much better when dipped in some of this creamy stuff! It tastes just like real mayo and works like a charm every time!

Simply put the following ingredients in the vitamix/food processor and blend to a smooth consistency:

¾ cup of water

¼ cup of virgin olive oil

1 cup of raw cashews (preferably soaked for a couple of hours first)

1 tsp of yellow mustard

3 pitted, chopped dates

3 tbsp of lemon juice

1 tsp of apple cider vinegar

¼ tsp of sea salt
